Lago Trasimeno - On Lake Trasimeno, in Umbria, an ancient but never out of fashion activity is still practiced, namely fishing. The locals have been involved in fishing for hundreds of years, but in recent years there has also been a revival because many young people have approached this profession that was practiced by their grandparents. The techniques are still the traditional ones. (continues below the video)
We leave at dawn with the small boats to cast their nets in the points that are known to be rich in fish. At the same time we also try to innovate, through the creation of two cooperatives: one is based in Panicarola di Castiglione del Lago and one in San Feliciano di Magione. These cooperatives have equipped themselves so that there is a fish supply chain. On the ground there are in fact people who transform it and who take care of its marketing. The buyers are the local restaurants; the fish caught is mainly composed of fish, eels, carp, pike and king perch. The Louisiana killer shrimp also lives in the lake, a species that has been accidentally intruded but is highly prized on a culinary level.
