Rotzo - In Rotzo there is a very long tradition of potato production. The area around this municipality was once a glacier. The retreating glacier has left a sandy and stony moraine soil, ideal for growing potatoes. In addition, the land is also flat, which favors its collection. People have handed down this activity from generation to generation, which still today is largely carried out following traditional methods, especially as regards the preservation of the product.

The potatoes are placed in places similar to ancient cellars: cool and dark, so that they can remain intact for a long time in a natural way. The potato variety grown in Rotzo is Binti, which is excellent especially for preparing gnocchi. The local recipe involves the use of an egg and flour, and then cutting the gnocchi by passing them on the back of a grater to give them a characteristic processing. Rotzo potatoes also reach large-scale distribution, and those who produce them are direct suppliers.
