Dolceacqua - Rossese di Dolceacqua is a vine that is grown in the territory of this municipality, and more precisely in two valleys, Val Nervia and Val Verbone. Here there are a particular microclimate, and above all a soil, which make this grape variety unmistakable in the flavor it then gives to the wine. In fact, it is grown only here: a similar vine in France has neither taken root nor taken hold.

The quality of the Rossese is in fact linked to the clayey and draining soil; the vines are grown mostly in sapling at an altitude of 150 to 500 meters, therefore on a medium hill. The DOC disciplinary of the wine that is obtained from Rossese dates back to 1972 and aging is not foreseen. In recent years, however, when more importance was given to quality rather than quantity in production, excellent aged reds were also obtained. The wine made from Rossese goes well with fatty fish, such as trout or cod, but also with meat dishes such as rabbit alla genovese, tripe and goat and beans.
