The gold of the Langhe: Roddi's truffles

Roddi - Visiting the Langhe you can see many castles, once inhabited by dark knights. Today, however, the Langhe have a decidedly more reassuring face, which is linked to an excellence of local and national gastronomy, namely the truffle. In fact, here is what is even called the king of truffles, namely the delicious white truffle. The tradition linked to this fruit of the earth is ancient, but it is still perpetuated today in Roddi. Here is a castle that once belonged to the Savoy family, but which is now inhabited only by dogs! In fact, the University of truffle dogs is located here. Selected animals are prepared to be able to recognize the unmistakable aroma of the truffle underground. These are mostly female specimens, which are the best predisposed, usually no older than 8 months. The relationship between the seeker and the dog is very intense and exclusive. The other tools of the trade are the lantern, the stick and the pickaxe, to extract the truffles from the ground.
