The Cupeta Festival in Torre Mondovì

Torre Mondovì - In 2019 Torre Mondovì replicated a very important festival for the territory, which celebrated a typical recipe that has been known for hundreds of years. The Sagra della Cupeta, strongly desired by the mayor of the town, provided for the presence of stalls and exhibitors, as well as of course a stand where the traditional 'cupete' would be made.

La cupeta has received the De recognition. Co. (municipal denomination of origin) but only in the original version, ie the one with the 'zuta'. The zuta was made at the time when honey was scarce, and in its place a syrup was made from boiling chestnuts. The most common cupeta today is made up of honey, walnuts and hazelnuts which are placed between two hosts. At the festival, about ten selected people, holders of the traditional recipe, would have prepared cupete with zuta by simmering the peeled chestnuts with walnuts and hazelnuts for hours and hours. Slow cooking is in fact the secret of this typicality of Torre Mondovì.
